Crab Alla Panna
Ingredients:
4 oz crab meat (Dungeness is the best)
1 oz clam juice
1 oz lemon juice
1 oz white wine
1 oz extra virgin olive oil
1 oz chopped garlic
1 pinch chopped fresh Italian parsley
1 pinch salt and pepper to taste
1 Tbs finely diced red bell peppers
1 Tbs thin slice green onions or chives
8 oz pre-cooked penne
2 oz Alfredo Sauce (use more to make creamier) Alfredo Sauce
Directions:
In sauté pan: coat bottom of pan with olive oil and cook on medium-high heat.
Add garlic and sauté until golden brown.
Add crab, toss and cook briefly.
Add lemon juice, clam juice, white wine, constantly stirring all ingredients.
Add salt, pepper and herbs and continue stirring.
Add Alfredo sauce and toss all ingredients together.
Dip penne in boiling water, drain and toss with sauce until sauce is creamy.
Garnish with green onion and red bell pepper
